  • Green chillies - 2
  • Ginger - a bit
  • Coriander leaves - 1 small bundle
  • Garlic - 6 cloves
  • Coriander seeds - 1/2 tsp.
  • Coconut grated - 4 tsp.
  • Sombu - 1/2 tsp

INGREDIENTS

  • Carrot - 1
  • Potato - 2
  • Beans - 4
  • Peas - 1 handful
  • Onion - 1 big
  • Curd - 2 to 3 tbl. sp.
  • Salt - 1 and a half tsp
  • Cloves - 2
  • Cardomom -2
  • Cinnamon - 2 sticks.

METHOD OF PREPARATION

Grind the masala ingredients (given above) into a smooth paste. Cook the vegetables with minimum water. In a frying pan, add 2 tsp. of ghee. Fry the cinnamon, cloves and powdered cardomom well and then fry chopped onion.Add the ground masala, fry well and then 1/2 cup of water and salt.

Stir well and simmer for few minutes. Add to it the vegetables. Mix well. Remove from the fire after 10 minutes.

This vegetable kurma can be served as a side dish for idlli, dosa, chappathi, poori and also for tomato rice, vegetable rice, coconut rice, fried rice etc.
