red pumpkin curry (parangikai curry)
ingredients
- Red pumpkin - 200 gms
- Jaggery (grated) - 2 tbl.sp.
- Grated coconut - 1 tbl.sp.
- Mustard - 1/2 tsp.
- Red chillies - 1
- Black gram dhal - 1/2 tsp.
- Bengal gram dhal - 1/2 tsp.

method of preparation
- Cut the vegetable into big cubes.
- Cook with a pinch of salt. (Vegetable should not be cooked too soft.) Drain out the water.
- Heat a little oil in a pan and fry mustard, chillies and dhals and add jaggery.
- When jaggery melts, add the vegetable and coconut.
- Mix well. Turn every now and then.
- Keep until the jagerry flavour is lost.
- Add a tsp. of rice flour and remove from the fire after a while.
