red pumpkin curry (parangikai curry)

ingredients

  • Red pumpkin - 200 gms
  • Jaggery (grated) - 2 tbl.sp.
  • Grated coconut - 1 tbl.sp.
  • Mustard - 1/2 tsp.
  • Red chillies - 1
  • Black gram dhal - 1/2 tsp.
  • Bengal gram dhal - 1/2 tsp.

method of preparation

  • Cut the vegetable into big cubes.
  • Cook with a pinch of salt. (Vegetable should not be cooked too soft.) Drain out the water.
  • Heat a little oil in a pan and fry mustard, chillies and dhals and add jaggery.
  • When jaggery melts, add the vegetable and coconut.
  • Mix well. Turn every now and then.
  • Keep until the jagerry flavour is lost.
  • Add a tsp. of rice flour and remove from the fire after a while.
