vatral kuzhambu - 1

INGREDIENTS

  • Sundakkai or 10 Manathkkali or any vegetable vatral - 2 tsp.
  • Tamarind - small lime size.
  • Mustard seeds - 1/2 tsp.
  • Red chillies - 4
  • Fenugreek - 1/2 tsp.
  • Bengalgram dhal - 1 tsp.
  • Salt - 1 and a half tsp.
  • Sambar powder - 1 and a half tsp.
  • Asafoetida - a bit.
  • Curry leaves - a bit.

METHOD OF PREPARATION

  • Soak the tamarind in half litre water and extract the juice.
  • Add salt, sambar powder and curry leaves, Heat a little oil and add mustard seeds.
  • When they crackle, add fenugreek, bengalgram and red chillies.
  • Then add vatral, fry them until golden brown. Add this to the tamarind juice and allow to simmer for 15 minutes.
  • Dissolve a teaspoon of rice flour in a little water.
  • Add to the boiling muzhambu and remove from fire after five minutes.

for masala

  • Blackgram dhal - 2 tsp.
  • Pepper - 1 tsp.
  • Red chillies - 4
  • Asafoetida - a bit.

method of preparation

  • Fry the above ingredients in a little oil until golden brown and grind to a smooth paste.
  • To the tamarind juice add this paste instead of sambar powder.
  • Prepare as said in the previous method and use other ingredients in the previous method.
  • Finally, season with mustard seeds.
