Idli milagai powder or podi (method 1)

 

ingredients

  • Black gram dhal - 3 tbl.sp.
  • Bengal gram dhal - 2 tbl.sp.
  • Mustard - 1 tsp.
  • Asafoetida - a bit
  • Red chillies - 5
  • Seasame seeds - 1 tsp.
  • Salt - 2 tsp.

method of preparation

  • Heat a little oil and fry the red chillies. Keep aside.
  • Fry the other ingredients until redissh colour and powder with chillies and 2 tsp. of salt.
  • ( 1 tsp. of sesame seeds, fried without oil may be added while powdering. But if the sesame seed is added, the powder cannot be kept for more than 10 to 15 days.)
  • The powder should be slightly coarsed.
  • The quantity of chillies and dhals can be increased or decreased according to taste.
  • This can be used with dosaialso.

Idli milagai powder or podi (method 2)

ingredients

  • Black gram dhal - 100 gms.
  • Bengal gram dhal - 50 grms.
  • Red chillies - 15
  • Asafoetida - 1 tsp.
  • Salt - to taste
  • Pepper - 2 tsp.

method of preparation

  • Fry the above ingredients without oil.
  • Fry all the ingredients individually. Grind with salt.
  • The powder should be slightly coarsed.
  • This powder can be kept for 2 to 3 months.
  • This can be a tasty side dish for idli and dosa.
