Idli milagai powder or podi (method 1)
ingredients
- Black gram dhal - 3 tbl.sp.
- Bengal gram dhal - 2 tbl.sp.
- Mustard - 1 tsp.
- Asafoetida - a bit
- Red chillies - 5
- Seasame seeds - 1 tsp.
- Salt - 2 tsp.
method of preparation
- Heat a little oil and fry the red chillies. Keep aside.
- Fry the other ingredients until redissh colour and powder with chillies and 2 tsp. of salt.
- ( 1 tsp. of sesame seeds, fried without oil may be added while powdering. But if the sesame seed is added, the powder cannot be kept for more than 10 to 15 days.)
- The powder should be slightly coarsed.
- The quantity of chillies and dhals can be increased or decreased according to taste.
- This can be used with dosaialso.

Idli milagai powder or podi (method 2)
ingredients
- Black gram dhal - 100 gms.
- Bengal gram dhal - 50 grms.
- Red chillies - 15
- Asafoetida - 1 tsp.
- Salt - to taste
- Pepper - 2 tsp.
method of preparation
- Fry the above ingredients without oil.
- Fry all the ingredients individually. Grind with salt.
- The powder should be slightly coarsed.
- This powder can be kept for 2 to 3 months.
- This can be a tasty side dish for idli and dosa.
