Rice payasam

ingredients

  • Raw rice - 1/8 of ltre.
  • Greengram dhal - 1 tbl.sp.
  • Jaggery - 2 big lime size
  • Milk -a small cup
  • Cardamom - 2
  • Cashewnut - 4
  • Raisins - 8
  • Ghee -2 tsp
  • Saffron (optional)

method of preparation

  • Heat 2 tsp. of ghee.
  • Fry the rice and dhal to slightly reddish brown. Add water.
  • When the rice and dhal are cooked well, add jaggery and boil until the jaggery flavour is lost.
  • Add powedered cardomom, and milk.
  • Fry cahewnut, raisins and add. Flavouring may also be added.

Prepare in the same method as given previously. Use 200 gms. of sugar instead of jaggery. Omit greengram dhal.

  • Cooked rice - 4 tbl. sp.
  • Grated jaggery or sugar - 6 to 8 tsp.
  • Grated coconut - 2 tbl.sp.
  • Cardomom - 2
  • Cashewnuts - 4
  • Kesari powder - a pinch
  • Milk - 1 small cup

 

method of preparation

  • Add a little water to the cooked rice and keep on a slow fire till it becomes very soft.
  • Add jaggery or sugar.
  • When it dissolves and mixes well, add coconut, cardomom and colouring.
  • Remove from the fire. Add a small cup of milk.
  • Fry and add cashewnuts.
