celeriac and pears soup

Celeriac contains no cholestrol or fat and provides an excellent source of dietary fibre. The taste and consistency is flavourful and this can be added to low calorie meals.

INGREDIENTS

  • Celeriac peeled and chopped - 400 gm
  • Onion chopped - 50 gm
  • Garlic- 30 gm
  • Olive oil - 15 ml
  • Bay leaf - 5 gm
  • Ripe pears, thinly sliced - 2
  • Salt and pepper to taste
  • Cream - 50 gm
  • Chives - 50 gm

METHOD OF PREPARATION

Heat the oil in a large pan at moderate heat. Fry the onion and garlic until they turn light brown. Add the celeriac to the pan and cook for a 5 minutes. Stir properly. Add some vegetable as you wish, pear slices and bay leaves and bring to a boil.

Keep simmer for 15 to 20 minutes. Remove the bay leaves and blend the soup in a food processor.

Return it to the pan and heat it gently. Season and stir in a little cream to taste. Sprinkle chopped chives and serve hot.
