Methu vadai
ingredients
- Blackgram - 1/2 cup
- Green chillies - 2
- Salt - to taste
- Ginger - a bit
- Raw rice powder - 1 tsp.
- Onion - 1 (chopped)
- Curry and coriander leaves - cut into small pieces.

method of preparation
- Wash well and soak dhal for two hours.
- Grind it into a slightly coarsed dough with chillies, ginger and salt.
- Add chopped onion, curry and coriander leaves and miw well.
- Heat oil in a deep frying pan.
- Keep a little dough on a plantain leaf or plastic sheet.
- Flatten it out to a vada.
- Fry in oil. Turn the vadai over, and the oil in a drainer and serve.
- Fry 4 to 5 vadas at a time.
- Serve hot with coconut chutney.
masala vadai / paruppu vadai
INGREDIENTS
- Bengalgram dhal - 1 cup
- Green chillies - 2
- Onion - 2
- Salt - 1 1/2 tsp.
- Garlic - 3 cloves
- Ginger - a small bit
- Sombu - 1/2 tsp.
- Cinnamon - 1 stick
METHOD OF PREPARATION
- Soak dhal for an hour.
- Grind together with green chillies, salt, ginger, garlic, cinnamon, 1 onion,sombu to a coarse paste without adding water.
- Chop or grate other onion and add. Mix well.
- Add chopped 2 tsp. of curry and coriander leaves.
- Flatten into small vadais and deep fry until a reddish brown.
- Drain out oil and serve hot.
